The Night-Shift Recipe

A canteen recipe reveals who kept a night crew fed during a winter everyone remembers differently.

The recipe called for forty onions and ended with a warning not to trust the left oven. Alia found it in the union canteen after her grandmother died. At home, the same dish required two onions and no warning.

She asked former workers why her grandmother had never mentioned cooking there. Several remembered a hired caterer. One remembered a woman who arrived after finishing another job and left before the morning office opened. The accounts seemed incompatible until Alia checked the dates on the kitchen invoices.

The caterer stopped during a dispute over payment. Her grandmother filled the gap for six weeks, buying ingredients on credit at a nearby shop. The invoice records resumed when a new contract began. The unpaid interval had vanished from the official account because nobody had issued a bill for her labor.

Alia copied the recipe onto a card for the canteen wall, with her grandmother's name and those six weeks beneath it. At the memorial lunch, she used the right oven. The first retired worker to taste the stew asked for seconds before he said he remembered.
